# What You'll Need:
→ Pickle fries
01 - 8 large dill pickle spears, drained and patted dry
02 - 1 cup all-purpose flour
03 - 2 large eggs
04 - 1 tablespoon milk
05 - 1 1/2 cups panko breadcrumbs
06 - 1 teaspoon garlic powder
07 - 1 teaspoon smoked paprika
08 - 1/2 teaspoon ground black pepper
09 - 1/2 teaspoon cayenne pepper (optional)
10 - Cooking spray
→ Spicy mayo
11 - 1/2 cup mayonnaise
12 - 1 tablespoon sriracha or other hot sauce
13 - 1 teaspoon fresh lemon juice
14 - 1/2 teaspoon smoked paprika
15 - Salt, to taste
# How-To Steps:
01 - Preheat the air fryer to 400°F.
02 - Trim each pickle spear and cut lengthwise in half to form fries; pat thoroughly with paper towels to remove excess moisture.
03 - Arrange three shallow vessels: place the flour in the first, whisk the eggs with the milk in the second, and combine the panko with garlic powder, smoked paprika, black pepper and cayenne (if using) in the third.
04 - Dredge each pickle half in flour, tap off excess, dip into the egg mixture, then press into the panko mixture until evenly coated.
05 - Place breaded pickles in a single layer in the air fryer basket without overcrowding; lightly mist with cooking spray. Work in batches if needed.
06 - Cook at 400°F for 8 to 10 minutes, shaking the basket or turning the fries halfway through, until the coating is crisp and golden brown.
07 - While fries cook, whisk together mayonnaise, sriracha, lemon juice, smoked paprika and salt in a small bowl until smooth and balanced to taste.
08 - Transfer fries to a platter and serve immediately with the spicy mayo; offer lemon wedges or additional dipping sauces if desired.
