12 - 2 tablespoons melted unsalted butter or coconut oil
13 - 2 tablespoons all-purpose flour or oat flour

# How-To Steps:

01 - Preheat oven to 350°F. Grease an 8x8-inch baking dish with butter or cooking spray.
02 - In a large mixing bowl, combine rolled oats, almond milk, eggs, Greek yogurt, protein powder, maple syrup, vanilla extract, baking powder, and salt. Mix until thoroughly incorporated.
03 - In a separate bowl, blend brown sugar, ground cinnamon, melted butter, flour, and salt until crumbly texture forms.
04 - Transfer half of the oat mixture into the prepared baking dish and distribute evenly.
05 - Sprinkle half of the cinnamon crumble mixture evenly across the oat layer.
06 - Pour remaining oat mixture on top of the crumble layer and spread uniformly.
07 - Distribute remaining cinnamon crumble over the top oat layer.
08 - Using a knife, gently swirl through the layers to create a marbled appearance throughout the cake.
09 - Bake for 30 to 35 minutes until the top achieves golden color and the center is fully set.
10 - Allow to cool for 10 minutes before slicing and serving.

# Expert Tips:

01 -
  • It tastes like coffee cake but keeps you full for hours because of all that protein.
  • You can make it once and eat it for days without getting tired of it.
  • There's something deeply satisfying about a warm slice with your morning coffee that hits different than a protein shake.
02 -
  • Don't skip the cooling time or your slices will fall apart into a delicious pile, which tastes the same but looks less impressive.
  • If your batter seems too thick before baking, add a splash more milk, but know that it'll firm up as the oats absorb liquid in the oven.
03 -
  • Use protein powder that you actually enjoy tasting on its own, because you'll taste it throughout this cake.
  • The butter in the crumble absolutely has to be melted, not cold, or you'll get chunks instead of a sandy texture.
